The CHSS fact sheet on swallowing problems after stroke [.pdf] gives a clear explanation of what to look for if you think the person has developed a swallowing problem. It also includes information on Nasogastric Tube Feeding (NG) tube to stomach via nose and on Percutaneous Endoscopic Gastrostomy  (PEG) or feeding tube directly in to the stomach. It also contains information on therapy and advice for reintroducing food once the artificial feeding methods have been removed and the swallow is safe again. There is a page coming up on how to encourage the person to eat after stroke.
